Out of season, we use frozen porcini mushrooms to preserve their quality.
Our polenta is cooked in the traditional style in a cauldron for an hour and seasoned with Valsassina dairy, Taleggio cheese, and mountain butter.
Our meats are selected from the best farms in Valsassina and Lombardy.
